Fruit Loaf



2/3 cup sugar
1/3 cup shortening
2 eggs
3 Tbsp sour cream or buttermilk
1 cup grated unpared apple or fruit

2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup chopped nuts

*Mix together thoroughly: sugar, shortening, eggs.
Stir in: buttermilk, apple or other fruit
Sift together and then gradually stir in the flours.
Fold in the nuts.

Pour into a well-greased 9x5x3 loaf pan.
Let stand 20 minutes before baking.
Bake at 350' for 50 to 60 minutes.
Bake until it tests done.
Serve warm or cold.



Applesauce Loaf

*Follow Fruit Loaf recipe except use brown sugar, not white.
Use applesauce in place of grated apple.
Omit sour milk.



Orange Date Loaf

*Follow recipe for Fruit Loaf except omit sour milk
In place of the 1 cup apple use the juice and pulp from
one orange with enough water to make 1 cup.
Add 1 cup cut-up dates.



Prune Loaf

*Follow Fruit Loaf recipe except omit sour milk.
Use 3/4 cup prune juice.
Substitute apple with 1 cup cut-up drained cooked prunes.
Add 2 tsp grated lemon rind with prunes.
Bake 10 minutes longer.



Banana Loaf

*Follow Fruit Loaf recipe.
Substitute apple with 1 cup mashed banana.
