Pumpkin Cake
there is no fat in this recipe

1 small can pure pumpkin
2 eggs
1 1/3 cups sugar
|
2 cups flour
2 tsp baking powder
1 tsp salt
1/2 tsp ground ginger
1/2 tsp nutmeg
1 tsp cinnamon
|
|
|
*Mix together pumpkin, eggs, sugar.
Stir spices, baking powder, and salt into the flour.
Add the dry ingredients slowly to the pumpkin mix
stirring between each addition.
Batter will be thick.
Turn batter into a 13x9 buttered & floured cake pan.
Bake at 350' for 30 minutes & until browned.
*Serve as is, with whipped cream, or with ice cream.
*Oatmeal Pumpkin Cake
Add 1 cup quick oats, 1/2 tsp baking soda, 1/2 cup milk
