Refrigerator Pickles with Fennel



2 large cucumbers
1 medium white onion
1/2 cup apple cider vinegar
1 Tbsp salt
1 tsp sugar

1 tsp mustard seed
1/2 tsp fennel seed
1/2 tsp celery seed
1/2 tsp ground black pepper


*Slice cucumbers & onion thinly into a bowl.
Add spices and vinegar into a large jar; shake well.
Add the cucumbers/onions to jar. Seal tightly.
Put in refrigerator. Shake occasionally.
Veggies will make their own brine.
Eat after three hours. Keeps for a week.

Alternatively
*Cut up any kind of root veggies; carrots, onion, cauliflower etc
Blanch in boiling water for 30 seconds, then quickly drop into ice water.
Prepare the same as cucumber recipe.
