Lemon Meringue Pie



1 cup sugar
3 Tbsp cornstarch
1/4 tsp salt
1 1/2 cups water

3 eggs, separated
2 Tbsp butter
1/2 cup lemon juice
3 Tbsp sugar

*Combine in saucepan sugar, cornstarch, salt, and water.
Stir and bring to a boil. Cook until thickened.
Remove from heat.
In a bowl, beat 3 egg yolks. Spoon some hot mixture into yolks
beating quickly. Now add the yolks to the hot mixture in the pan.
Cook another 2 minutes. Remove from heat.
Stir in butter and lemon juice and mix thoroughly.
Add to pie crust.

*Meringue:
Beat 3 egg whites until fluffy. Add 3 Tbsp sugar.
Beat this a bit longer. Spread on top of pie.
Bake at 350' for 10 minutes.
