Taboli Salad



1 lb pkg Taboli wheat (bulghur wheat)
    (find in produce dept)
3 large tomatoes
2 bunches green onions
1 or 2 large cucumbers
1 green pepper
1 bunch parsley




1 cup mild vegetable oil
1 cup RealLemon lemon juice
1 tsp salt
1/8 tsp black pepper

*In a large bowl:
Add the taboli wheat. Cover with water, stir quickly, drain.
Wash all veggies in a bowl of 50/50 water/vinegar. Rinse.
Peel the cucumber, dice. Remove any tough seeds.
Leave most of the stems of the onions. Slice thinly.
Dice the green pepper and tomatoes.
Squeeze washed parsley into a bunch and slice thinly.
Add all the veggies to the wheat in the large bowl.
Beat together the oil, lemon juice, salt, pepper
and pour over the ingredients. Stir until thoroughly coated.
Refrigerate 4 hours or overnight until wheat is softened.
Stir occasionally to incorporate juices.
Keeps well in refrigerator for 1 week.
