Wilted Lettuce



6 bacon slices
1 large head leaf lettuce
1 medium onion, thinly sliced
1/4 cup cider vinegar
1 1/2 tsp sugar

1/2 tsp dry mustard
1/4 tsp salt
Dash pepper
2 hard-boiled eggs, sliced in discs


*In large skillet, fry bacon til crisp. Drain on paper towels.
Discard all but 1/4 cup bacon drippings.
Tear lettuce into bite-sized pieces.
Crumble bacon and add with onion slices. Toss well.
In skillet, add drippings and other spice ingredients.
Heat to boiling, stirring constantly.
Remove skillet from heat. Add lettuce to skillet.
Toss in skillet until lettuce is slightly wilted & coated.
Turn into serving bowl. Garnish with eggs.
